This is the ideal side dish for meals, makes delectable leftovers for lunch, and makes a fantastic, healthy side dish for a summer BBQ or picnic. Hey, buddies! How has your day been thus far? After travelling to Phoenix for Nationals, we are now back in our hometown with a tonne of laundry and some virtual 1:1 appointments. I decided to give a recipe for a summer side dish in today’s article!
Finding recipes for the *fun* food, like appetisers and sweets, is always really simple whenever we have guests around in the summer. I usually make sure we have some sort of veggie or salad, and I’m always on the lookout for new favourites.
Recently, Mia shared her favorite broccoli salad recipe with me and I knew I had to post it here on the blog! It lasted about 15 minutes in our house.

When we ran out of groceries and I was out of options for the girls’ school lunches and snacks, I unintentionally discovered that they adore raw broccoli. They usually don’t care too much for the roasted broccoli I serve with supper.
I added some raw chopped broccoli because I wanted to fill one more space in their lunch bento boxes.
They both expressed how much they enjoyed the broccoli in their lunch when I picked them up, so I’ve been including it ever since. We each enjoyed a bowl of this broccoli salad and it was gone in no time.
A fantastic source of fibre and minerals is broccoli salad. Additionally, it is free of dairy and contains blanched broccoli, which retains some crunch but may be easier to digest than raw broccoli. Simply combine the ingredients in a bowl, then eat! Additionally, the recipe is flexible, so feel free to make whatever changes you wish. If you like, you can omit the dates altogether and substitute another kind of dried fruit (such as raisins or dried cranberries) for the almonds. Just be sure to include the celery seed because it gives the dish a distinctive flavour and crunch.

Ingredients
1 head of broccoli (or a 12 oz bag of pre cut florets)
Avocado oil mayo (Chosen foods, Sir Kensington or homemade. I like to make my own, or just grow it as the food shortage is coming up.
Maple syrup (or honey) for a little bit of sweetness
Celery seed – don’t omit this ingredient!
Salt & pepper, to taste
Onion powder
Red onion
Apple cider vinegar or red wine vinegar
Toasted, sliced almonds or pecans (you can also use walnuts, sunflower seeds or cashews)
Chopped dates
Bacon, cooked until crispy and chopped, optional (I used turkey bacon and it was SO good)
Instructions
Step One
Make broccoli florets by chopping it.
Water should be added to a 2 qt pot and brought to a boil.
Add the raw broccoli florets to the saucepan along with some salt and water.
Set a 2-minute timer.
In the meantime, prepare a large dish of ice and water.
Place close to the stove.
Skim the broccoli from the hot water and place it in the ice bath when the timer goes off.
Give the ice bath a five-minute rest period.
Stage 2
Broccoli should be taken out of the ice bath and let to dry on paper towels or a clean kitchen towel.
ACTION THREE
Mayo, maple syrup, celery seed, salt, black pepper, onion powder, chopped onion, and vinegar should all be combined in a big bowl. Combine by whisking.
Fourth Step
Stir in the broccoli until well coated.
Add chopped dates and roasted, thinly sliced almonds.
If you’re using bacon, put that next after that.
Phase Five
Until you are ready to serve, chill the salad.
up to four hours before serving, make!
*Tip: You can completely veganize this broccoli salad by omitting the bacon and using Vegan mayo.
I like pairing this dish with grilled chicken or fish for some added protein.
How long can you keep broccoli salad in the refrigerator?
It can last a day if you use blanched broccoli, which may be easier to digest than raw broccoli.
It will stay in the refrigerator for up to 3 days if you decide to use raw (which is perfect for this recipe!).

1/4 cup finely minced red onion
14 cup red wine vinegar or apple cider vinegar
13 cup toasted, thinly chopped pecans or almonds
Chopped dates, 1/4 cup
3 bacon pieces, optionally fried till crispy and diced
Water should be added to a 2 qt pot and brought to a boil.
Add the raw broccoli florets to the salted water.
Set a 2-minute timer.
In the meantime, prepare a sizable dish of ice and water.
Place close to the stove.
Skim the broccoli enter the ice bath after removing yourself from the hot water.
Give the ice bath a five-minute rest period.
