Oven-Baked Parmesan French Fries

Calories: 251 calories

Total fat: 11 g

Saturated fat: 3 g

Cholesterol: 1 mg

Sodium: 234 mg

Carbohydrate: 32 g

Dietary fiber: 2 g

Protein: 6 g

Sugar: 1 g

Ingredients

5 russet potatoes

¼ cup of extra-virgin olive oil

½ cup of grated Parmesan cheese

Salt and freshly ground black pepper

Preparation

1. Preheat oven to 400 degrees Fahrenheit.

2. Peel potatoes and cut into half-inch thick (lengthwise) strips, then cut into ½-inch thick fries. Place the potatoes in a pot with 1 tablespoon of salt and cover the potatoes with cold water. Bring to a gentle boil, then reduce to low heat and cook until a paring knife tip can easily pass through, and the potatoes are cooked about 3/4 of the way through.

3. Drain them well and place them in a mixing bowl. Add ½ teaspoon of black pepper, 1 tablespoon of salt, and olive oil into the mix. Toss properly and place in 1 layer on a non-stick baking sheet. Bake until light brown.

4. Sprinkle with Parmesan and bake for another 6 or 7 minutes, or until well-browned and crispy, and the cheese is melted and caramelized. Remove from the oven and set aside to cool for 2 minutes. Serve with sugar-free ketchup or the condiment of your choice.
